Sourdough is dough that goes through two fermentation processes.
It develops a unique taste and crust.
Nothing to be compared...I just love sourdough.

I got to know this fantastic bread when visiting the PIER.
It was a cold day and people were lining up right in front of this lovely bakery.
I thought...why not?
Had a brilliant soup served in a huge round bread.
I could have eaten all the bread...but I left some crumbles to the birds.
From that day, sourdough became part of my dreams.
In Miami, close to my place, Renaissance Bakery did some French sourdough baguettes...so I could have the best of both worlds: breads from California and Key Lime Pie from Joe´s Stone Crab...
I don´t mean to make you jealous, but the Key Lime from Joe´s has been developed on a different planet.
Hope to live to have both again...with some King Crabs and a nice Chardonnay...
